This awesome recipe from the Fixate cookbook is one of my favorite breakfast meals during the 21 Day Fix. It’s a great way to start your day with a serving of protein.
Here’s what you’ll need:
one cup of egg whites (store bought Egg Beaters or taken from 7-8 large eggs)
one scoop of chocolate Shakeology (or your favorite chocolate whey protein powder)
nonstick cooking spray (I use coconut oil)
one cut of reduced fat plain Greek yogurt
1/2 teaspoon of pure vanilla extract
Stevia (to take)
one cup of sliced strawberries
one cup of fresh blueberries

Here’s how to make it:
Combine egg whites and protein powder in a medium bowl; mix well.
Heat small nonstick skillet, lightly coated with cooking spray, on medium-high heat.
Spoon about 1/4 cup of batter into skillet; cook for 1 minute to until bubble form on top. Flip with a spatula and cook for 30 seconds.
Repeat with remaining batter to make four crepes. Set aside.
Combing yogurt, extract, and stevia in a small bowl; mix well.
Fill crepes evenly with yogurt mixture, strawberries, and blueberries.

This makes four crepes and each crepe counts as 1/2 purple container and 1/2 red container. I eat two crepes and count it as 1 purple and 1 red. This is a perfect breakfast for chocolate lovers like me and a quick, easy recipe for busy mornings!
